King of the Grill

Father's Day is a day to celebrate dad! Let dad be the King of the Grill with these easy recipes shared with us by Deb Haase. She ensures our Lowe's Racing team is feed and engergized every day! 

WARNING: Your mouth may start watering while reading these delicious recipes.

Pork & Pineapple Kabobs

2 pork tenderloins, trim fat & cut into 1 inch cubes

1 fresh pineapple, trim, core & cut into 1 inch cubes

1 c. low sodium soy sauce

½ c. pineapple juice

¼ c. packed brown sugar

¼ c. minced Vidalia or any sweet onion

4 cloves of garlic, minced

Bamboo skewers soaked in water

Mix all marinade ingredients and stir until the sugar has dissolved.  Let stand for an hour to allow the flavors to blend.  (This can also be made a day ahead of time.  Keep refrigerated.)  Place the tenderloin cubes into a one gallon zippered plastic bag and the pineapple cubes into a separate one gallon zippered bag.  Pour 2/3 of the marinade over the pork cubes and remaining 1/3 of the marinade over the pineapple cubes.  Move the cubes around to coat all sides.  Remove as much air as possible from the bags.  Refrigerate at least one hour.  Place the meat and pineapple on skewers.  Discard the marinade from the meat, but reserve the marinade from the pineapple to baste the skewers while grilling.  Grill over medium high heat.


Mustard Roasted Potatoes

2 lbs. baby red potatoes, clean and remove the eyes but do not peel

1 medium Vidalia or any sweet onion, cut into large chunks and separate the layers

¼ c. extra virgin olive oil

3 tbsp. stone ground mustard

¼ c. chopped fresh flat leaf (Italian) parsley

1 tbsp. fresh ground pepper

1 tsp. kosher salt

Heavy duty aluminum foil

Cut the potatoes in half or quarters to make uniform sizes. In a large bowl, combine the extra virgin olive oil, mustard, parsley, pepper and salt.  Add the potatoes and onions.  Stir to coat all over.  Pour the potatoes and onions onto a large sheet of heavy duty aluminum foil and arrange into a single layer.  Place another large sheet of aluminum foil on top of the potatoes and crimp the edges all the way around to form a pouch.  Place the pouch directly on the grill over medium heat.  (350-400 degrees)  Close the lid.  After 15-20 minutes, turn the pouch over and grill another 15-20 minutes on the other side.   


Italian Dilled Chicken

4-6 boneless skinless chicken breasts

½ c. Pinot Grigio or any dry white wine

¼ c. extra virgin olive oil

1 packet Good Seasons zesty Italian dressing mix

1 tbsp. dry dill weed

1 tsp. fresh ground pepper

Trim any fat from the chicken.  Combine marinade ingredients.  (This is better if made and hour or so ahead of time to allow the flavors to combine.)  Place the chicken in a one gallon zippered plastic bag and pour the marinade over the chicken.  Move the chicken around to coat all sides.

Remove as much air as possible from the bag.  Refrigerate overnight.  Remove chicken and discard the marinade.  Grill on a preheated hot grill, turning once half way through cooking.


Turkey Burgers

1 lb. ground turkey

½ c. chopped red bell pepper

¼ c. chopped fresh cilantro

1 tsp. Lawry’s seasoned salt

½ c. low sodium Worcestershire sauce

Extra virgin olive oil

Wheat buns

Honey Dijon mustard

Green leaf lettuce

Tomato slices

Combine the ground turkey, bell pepper, cilantro, seasoned salt and Worcestershire sauce.

Mix well.  Form three large patties.  (Ground turkey has a lot of moisture in it and the patties will shrink considerably.)  Coat both sides of the patties with extra virgin olive oil.  Grill over medium high heat, turning once half way through cooking.  The internal temperature should be at least 160 degrees when done.  Coat both halves of the bun with honey Dijon mustard.  (The mustard is key to the overall flavor combination of this burger.)  Place the burger on the bun and top with lettuce and tomato.
